Chakka Varattiyathu Recipe | Traditional Jackfruit Preserve

Ingredients
- 6 cups Tropical Exotics Fresh Ripe Jackfruit Bulbs (firm-fleshed variety)
- 1½–2 cups dark jaggery, grated (adjust to taste)
- 3–4 tablespoons pure ghee
- ½ cup water (for jaggery syrup)
- Optional: ½ teaspoon cardamom powder or dry ginger powder
Method – Pressure Cooker (Easy & Fast)
- Add ripe jackfruit bulbs (seeds removed) and 1 cup water to a pressure cooker.
- Pressure cook for 3 whistles, then simmer for 10 minutes. Turn off heat and cool.
- Grind the cooked jackfruit into a coarse paste without adding extra water.
- Melt jaggery with ½ cup water in a saucepan. Strain to remove impurities.
- Transfer jackfruit paste to a heavy-bottom kadai or uruli. Add jaggery syrup.
- Cook on medium-low heat, stirring frequently, until moisture evaporates.
- Add ghee gradually and continue stirring until the mixture darkens and leaves the pan.
- Add optional spices, mix well, and switch off the heat. Cool completely.
Traditional Open Pot Method (Authentic Taste)
For a traditional texture, use jackfruit in three forms – smooth puree, coarse crush, and finely chopped. Combine with jaggery in a heavy-bottom pot and cook slowly on low heat for 1–1.5 hours, adding ghee gradually until thick and caramelised.
