Masala Chai Recipe (Authentic Indian Spiced Tea)

A classic Indian masala chai made using strong black tea, milk, and aromatic spices from Tropical Exotics. Ingredients
- ½ cup water
- ½ cup milk (whole milk recommended)
- 1–2 tsp loose leaf black tea or 1 tea bag (Assam tea preferred)
- 2 tsp sugar, jaggery, or honey (adjust to taste)
- ½ inch fresh ginger, peeled and crushed
- 2–3 Tropical Exotics green cardamom pods, crushed
- 1 small Tropical Exotics cinnamon stick
- 1–2 Tropical Exotics cloves
- 1–2 Tropical Exotics black peppercorns (optional)
Instructions
- Prepare the spices: Lightly crush the cardamom, cinnamon, cloves, black pepper, and ginger to release their natural oils.
- Boil water and spices: In a small saucepan, bring the water to a rolling boil. Add the crushed Tropical Exotics spices and ginger.
- Simmer the decoction: Reduce heat and simmer for 2–3 minutes to infuse the flavours.
- Add tea and sweetener: Add black tea and sugar/jaggery/honey. Simmer for 1–2 minutes until the liquid darkens.
- Add milk and boil: Pour in milk, bring to a full boil, then simmer for 2–3 minutes to blend all flavours.
- Strain and serve: Turn off heat, strain into a cup, and serve hot.
