Passion Fruit Jellies (No Bake Dessert)

A light and refreshing dessert made with fresh Tropical Exotics passion fruit. These passion fruit jellies are sweet, tangy and perfect for beginners. This no bake recipe is healthy, simple and ideal for family desserts or festive treats.
Ingredients
- 6 fresh Tropical Exotics passion fruits
- 4 sheets leaf gelatine
- 300 ml tropical fruit juice
- 200 ml coconut water
- 1 tsp flavourless oil for greasing
- Vanilla ice cream or yogurt for serving
Instructions
- Extract the juice: Cut 4 passion fruits in half. Scoop and press the pulp through a sieve to collect about 50 ml juice.
- Soften the gelatine: Cut gelatine sheets into small pieces. Place in cold water for 5 minutes.
- Mix the juices: Add tropical juice to the passion fruit juice until you reach 350 ml in total.
- Melt gelatine: Warm coconut water gently in a pan. Squeeze excess water from gelatine and stir it into the warm coconut water until dissolved.
- Combine: Pour melted gelatine into the juice mixture and stir well.
- Fill moulds: Lightly grease 4 small jelly moulds. Divide the mixture evenly and refrigerate for 6 hours.
- Serve: Turn out the jellies. Spoon pulp from the remaining 2 passion fruits over the top. Serve with vanilla ice cream or yogurt.

- Use ripe and aromatic Tropical Exotics passion fruit for the best flavour.
- This is a no bake, low calorie and family friendly dessert.
- You can replace gelatine with agar agar for a vegetarian version.
- Use mango juice or pineapple juice for variation.
